Sloppie Marks

2 pounds hamburger
1 Pound Breakfast Sausage
1 Pound Wild game burger (venison) Optional
1  cup chopped Sweet onion (I use closer to 2)
4-6 tsp Olive oil
1/4 cup chopped green bell pepper
2 clove garlic
3 stalks celery, finely chopped
2 cups Sweet baby rays (adjusted as needed to keep moist)
¼ cup Worcestershire
2
Bay Leaves 
¼ CUP Franks Red Hot
1 cup catsup if you want to mild down the bbq sauce flavor Kastup can replace the Sweet baby rays if you don’t care for the bbq flavor
3 teaspoons brown sugar
(adds a little sweetness)
3 teaspoon prepared yellow mustard
3 tbls Chilly Powder
Salt and pepper to taste

Brown Hamburger
In a separate dish sauté Onions and Garlic (celery) in Olive Oil
Combine all ingredients and cook down on low burner for 4-6 hours stirring frequently
This can also be done in a slow cooker
Add more sweet babys rays if drying occurs

Cook down until thick usually about 2-3 hours on low 

Feeds about 15-20 good eaters

 

Marks Hot Wings
Bath wings in milk and egg mixture for 15 Minutes
Coat wings with flower, --- salt and pepper to taste --- (shake in bowl with lid)
Deep fry wings 4-6 at a time for about 10 minuets at 375 until done

While this is cooking melt 2-3 stick butter
Mix butter with Franks Red Hot

Sause Recipie
HOT           - Use straight Franks Red Hot
Medium      - Mix 50% butter and 50% Franks Red Hot
Flavorfull    - Mix 25% butter and 75% Franks Red Hot

When the wings are done place wings in bowl with shaker Sause and shake until well coated and serve

 

BANANA  DUMP  CAKE

1/2 cup oleo
2 cups sugar

1 cup mashed bananas (I like 3 ripe bananas)
2 eggs

Mix well then dump in:
1 cup sour milk
2 cups flour
2 tsp. baking soda

Mix well
Pour in greased 9x13 pan
Bake at 350 degrees for 35 minutes
ENJOY !    YUMMY !!!
You really can't do the toothpick test on this one it is too moist.   The top should be a golden brown.  Laura

 

Venison ALa Mark
You can use this recipie with just about any meat

Prepare steaks in about 2-3 inch by 4-6 inch pieces about 1/2" to 3/4" thick
Prepair and milk and egg mix for coating and soak meat in mixture
Prepair a flat pan with a 50-50 mixture of flower and Bread crumbs

Take meat from milk/egg mix and coat on both sides then re dunk in milk and egg and flower and place on cookie sheet
place meat with coating on it in frige for 20-30 minutes
Prepair a large pan with about 1 inch of oil in it and turn to high (yes this makes a mess) keep oil around 350-375

Cook meat in pan for about 5-7 minuets on each side until coating is crisp
once done place in shallow bakeing dish cook up all the meat this way and fill bakeing dish
 

On top of each piece of meat put 1/4 teaspoon of Peach Jan
Pour over meat 1/4 to 1/2 cup white wine (just enough to wet the bottom of the pan)

Bake at 350 for about 1 hour until meat is done
do not let dry out if it is drying then add a little more wine
 

 

Marks Jumping Jambalaya
You can use a combination of any and all the meet products listed
to me you have to use at least three meats to enhance the flavor

You can also any other meet or Poltrey

Chicken, Beef, Sassage (Ground or link), Bratworst, Itialian Sassage, Any wild game

Cook the meat on the BBQ or in a pan but the BBQ adds to the flavor
Do not over cook the meet leaving it a little raw is ok because the meat is going to cook for another hour or so
Cube all meat into bite size pieces and put into large pan and let it cook together about 30-45 minutes
Add stewed tomatos until it make a soupie mixture you want extra liquid

Add Franks red hot, you will have to play with this to adjust to your tast buds add a little at a time and keep tasting
             1/4 cup per gallon of soup for tasty
             1/2 Cup per gallon of soup for mild to hot
             1 Cup for Hot to extream

 
Let cook for about another 30-45 minutes

Add instaint rice until the rice soaks up 90% of the liquid
if you add too much rice and all of you liquid soaks up add tomato juice
keep heeting on low until hot and rice is all cooked
Optional: Add some BBQ Srimp on top when serving

 

Johns Chicken on a Stick (Teriyaki)

Use Boneless chicken
 Cut Chicken in to 1/2 to 1 inch strips
 Put chicken into a Vacuum bag (Ziploc if vacuum not available)
 Pour in Teriyaki Marinade to cover chicken
 Vacuum seal the bag
 Let sit for 4 hours minimum, but overnight is better
 Soak wooden
skewers in water over night
 Lace the chicken onto the skewers
 Cook on BBQ until done

 

Grandmas City Chicken
 

For this recipie you can use any combination of meets that you like but tipically what is used is a combination of Beef and Pork

Other meat options are; any kind of wild game mixed,  Usually you want to use a dryer type meat with a Juicie Type meat

1 lb. Beef in 1/2" cubes
1 lb. lean pork in 1/2" cubes
Fine dry bread crumbs
Milk and Egg Misture for soaking meat once on skewers
salt and pepper
wooden skewers 1/4 c. oil

Alternate veal and pork cubes on the sticks.  (kind of make it look like a drum stick)
Dip in bread crumbs.
Then in milk/egg mixture.
Then again in the bread crumbs.
Brown on all sides in hot fat in a heavy skillet.
Cook on medium heat.
Add seasonings.
Cover and bake at 350 degrees for 1 hour.

 

 

Another Vesison Recipie

Venison chops or Steak

Place meat into a Tupperware type bowl and cover with soy sauce, Just put enough in so that the meat is soaking in it, Sprinkle the meat to flavor with garlic powder,
Let it soak for about ½ to 1 hour
Drain off the excess soy sauce
mix together one egg and ¼ cup of milk and put in with meat
shake the bowl with the combination of the egg, milk and soy soaked meat
cover the meat with flower and shake until the meat is evenly coated
fry the meat in oil until meat is cooked about Medium (very little to no pink left in meat

Serve on a bed rice Broccoli Rice (or whatever flavor you prefer)

Put the excess soy sauce in a pan with a stick of butter and cut up a onion and simmer for about 15 to 20 minutes until tender and serve over meat

French Onion Soup

2 Tablespoons butter or margarine
4 cups sliced onion
3 cups beef broth
1−1/2 cups water
1 Tablespoon cooking sherry
1 Tablespoon Worcestershire sauce
1/4 teaspoon black pepper
1 dash dried thyme
1 cup soft croutons
1/2 cup shredded mozzarella cheese

Melt butter in saucepan over low heat. Add onions and cook 20 minutes, stirring occasionally. Add beef broth, water, sherry, Worcestershire sauce, pepper, and thyme to pot. Increase heat and bring to boil, then reduce heat. Cover and simmer for 5 minutes. Divide into bowls. Top with croutons, then mozzarella. Broil until cheese melts and begins to brown.

 
 
 
Hot Pot Chile
Brown Hamburger 1 lb
Brown 4 Bratwurst slice about the size of a quarter ( i like the Italian flovored)
Brown 2 Large Chicken brest
Mix all the meets together and simmer
Dice one large sweet onion about 1-2 cups, Sautee in olive oil
Add 2 to 3 cups of you favorite salsa with the desired heat you like (mild, hot, etc)
add one cup of franks red hot sauce ( adjust to you liking)
Add two quarts of stewed tomatos
Two table spoons of fresh garlic
Add more (stewed tomatoes, tomato past or tomato juice to your liking for thickness
Add beans to your liking

adjust quantities to your liking for heat or thickness and let simmer for 4 hours stirring every ten minutes

 
Porterhouse Steaks with Mushroom and Garlic Sauce

Four 10–12 oz. Porterhouse steaks

Bring steaks to room temperature. Grill on high heat 6 minutes or until golden brown. Turn and cook on other side 5 minutes or to desired doneness.

Note: You can tell when a steak is cooked to medium by touching the fat part of the palm of your hand under your thumb. Poke your hand and when the steak feels like that it is done to medium.

Mushroom and Garlic Sauce
1 lb. mushrooms (of your choice)
3 minced garlic cloves
1 tbsp. oil
1 1/2 cups beef broth
3 tbsp. flour
3 tbsp. butter

Sauté mushrooms in oil with garlic. Cook 4 minutes and add beef broth. Bring to a boil and cook about 4 minutes. Mix butter and flour together. Whisk into mushroom mixture. Add salt and pepper to taste.

 
SEVEN-UP JELLO SALAD  

      

           A Burback tradition via Dorothy, John's Mother and Laura his wife.

 

2 Cups boiling water                                 In a blender, blend:

2 small boxes of lemon jello                      14 ounces of lemon lime pop (like 7-up)

2 Tablespoons sugar                                2 - 8 oz. bars of Philly Cream Cheese     2 teaspoons of vanilla

 

1)  Dissolve the above ingredients             2)  Pour this mixture into the bowl with

     into the bowl you will use to                     the jello and blend well.  Cover and 

     set up the jello mixture.                           put in the frig to set up.

 

3)  When the jello mixture sets up enough to suspend  ONE CUP OF WALNUTS

     that have been finelychopped, add them to the mixture and stir well.  Pour into

     a jello mold or leave it in the mixing bowl and return to frig for final set-up.

     and return to frig to finish setting up. 

 
 
Yummy homemade Bailys!


1 CUP ANY WHISKEY (I USE CANADIAN CLUB OR MAKER'S MARK)
1 8 OZ CONTAINER WHIPPING CREAM
1 CUP MILK
1 CAN SWEENTED CONDENSED MILK
2 TSP COFFEE CRYSTALS
3 TBLSP HERSEY'S CHOCOLATE
 
MIX TOGETHER, ENJOY!
 
MAKES APPROX 1 FULL WHISKEY BOTTLE (APPROX 750 ML) AND THEN ANOTHER CUP OR TWO.


 
Kellys Famous Venison Steaks

Enough venison steaks for 3-4 people
shake venison steaks in ziplock back with flour, salt and pepper
In a pan heat 2 TBLSP of butter and 1/4 cup soy sauce.
Place steaks in pan and brown on both sides
turn heat down to simmer, add sliced onion, one can or one fresh portabella mushrooms
Add 1/4 cup water, cover and simmer for 20-30 minutes
Enjoy!
 
 
 
Dave and Kathy's Ginger Snap Meatballs

2 lbs of meatballs – prepackaged are the easiest…

 

Sauce:

1 large can of tomatoes cut up

1 ½ cup brown Sugar

½ cup vinegar

15 crushed ginger snap cookies

 

Put the sauce together and bring it to a boil, Mix with frozen meatballs

 

Put in oven 350 for 1- 1 ½ hours or in a crock pot on low for 6-8 hours.

Acorn Squash Spaghetti Bowl
Prepare your normal spaghetti
Cut acorn squash in half and add 1/4 stick butter and one to two tablespoons brown surgar and bake at 425 for about an hour until tender
remove from oven and put in a layer of noodles then sauce and then parmesan cheese (usually two layers) then broil until crispie on top

Mark and Sue Bread and Butter Horseradish Garlic Pickles
Make pickles according to the direction on the Mrs. Wages pickling packet http://store.mrswagesstore.com/mrswagbreadb.html
Add in layers while putting in the pickles into jars 2 heaping tablespoons of freshly ground horseradish and one  tablespoon minced garlic per quart
I added 1 tbs Horseradish and 1 tbs garlic and these are kind of mild, and some I added 4 tbs Horseradish and 2 tbs garlic these are very flavorful
 
Marks Chicken ALA parmesan/tomato
6 boneless chicken breakfast with or without skin
4 cups of your favorite flavored croutons
Tomato slices (two per chicken) or us can use your old spaghetti sause
can you tell i have had spaghetti sause left over latley LOL
mozzarella cheese fresh grated
3 eggs and milk
 
mix in a bowl eggs and milk
put chicken in mixture
Grind up your croutons in a food processer or blender
put mix in ziplock baggy
drain chicken and place in baggy
shake shake shake your baggy
place chicken on backing dish and bake at 350 about 45 min until done
when done remove from oven
place cooked chicken breast on plate
either 2 tomato slices or very dry tomato sauce placed on top of chicken
drain with slotted spoon
put grated cheese on top and broil for 5 to 7 minutes

Sues Chocolate Peanut butter nobakes

Choc No Bake Cookies
2 C Sugar
1/2 C milk
1/3 C Cocoa
1/4 C Marg or Butter
Put in pan, bring to boil over Med Heat, stirring often. Continue boiling for 3 minutes
Remove from heat and add:
1/2 C Peanut Butter
1 tsp Vanilla
3 C Oatmeal
Drop by large spoonful on wax paper and cool

Sues Peanut butter nobakes
2 C Sugar
1/4 C Margarine
1/2 C Milk
Bring to a full boil over Med Heat for about 2-3 minutes
Remove from heat and stir in peanut butter and vanilla, stir until peanut butter is melted... See More
1 C Peanut Butter
1 tsp Vanilla
Stir in Oats:
3 Cups Oatmeal
Drop by spoonful on wax paper and cool Enjoy!!!!!
